ΥΛΙΚΑ

  • 1 cup tahini
  • 2 tablespoons honey
  • 1 cup lukewarm water
  • 1 teaspoon baking powder
  • 3 cups all-purpose flour
  • ½ cup golden raisins
  • ½ cup coarsely chopped walnuts
  • ½ cup candied fruit
  • ½ cup orange marmalade
  • 2 tablespoons honey
  • orange blossom water
  • powdered sugar
  • cinnamon

A lenten and absolutely delicious treat. Traditional Greek cuisine has much to offer in this area, as does ecclesiastical and monastic tradition, since there are many kinds of lenten sweets. Apart from the strictly lenten desserts, during this period they also used to make lenten variations on other classic sweets, replacing, for example, butter with oil.

For the dough: Mix the tahini, honey, and water in a bowl. Add the baking powder and flour and knead. Leave the dough to rest for 30 minutes.
For the filling: Mix all the ingredients together and set aside.
For the skaltsounia: Roll out the dough into a thin sheet. Use a cookie cutter to cut out round shapes about 8–10 cm. Place a little filling on each round. Fold into a half-moon and press the edges closed with a fork, as you would for small cheese pies. Bake in a preheated oven at 180°C for about 20–25 minutes, until they color. Sprinkle the pastries with orange blossom water while they are still warm. Dust with powdered sugar and cinnamon. Leave to cool and serve.
