ΥΛΙΚΑ

  • 1 cup good-quality olive oil
  • 125 g soft margarine
  • 1 cup sugar
  • 1/2 cup orange juice
  • zest of 1 orange
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 egg and 1 yolk (keep the white for brushing)
  • 1/3 cup ouzo or brandy
  • vanilla or one sachet orange-flavoured sugar
  • approximately 1 kilo all-purpose flour
  • optional: a little sugar, for sprinkling before baking

Put all the ingredients except the flour into the mixer. Beat them at medium speed for a short while until well combined. Stop the mixer, transfer to a bowl, and add the flour gradually. Knead by hand, not too much, so they turn out fluffy. You should end up with a soft dough that can be shaped. Shape into whatever designs you like. Place them on a baking tray lined with parchment paper. Brush with the egg white thinned with a little water and, optionally, sprinkle with sugar before baking in the oven. Bake for 20–25 minutes at 180°C, depending on their thickness.
