- 1 kilo red mullet, cleaned
- 300 ml oil
- 150 ml red wine vinegar
- 3 tbsp flour
- 1 tsp sugar
- 3 cloves garlic, crushed
- 1 medium dry onion, finely diced
- 2 bay leaves
- “Leaves” from 1 small sprig of rosemary, fresh and finely chopped, or 1 tsp dried, very well ground (to a powder)
- salt & freshly ground pepper

For this recipe, get fresh red mullet. It is a traditional recipe that was invented to preserve the plentiful fish, since there was no refrigerator. Savoro is a spicy sauce made from olive oil, garlic, vinegar and herbs. In the old days, it was used as a method of preserving fish. In addition, savoro was the main food of sailors, because it could be kept for a long time, while the crews did not suffer from scurvy caused by vitamin deficiency.

In a deep frying pan or a wide pot, heat the olive oil over medium heat and lightly fry the red mullets (there is no need to flour them), until they form a light crust, for 1–2 minutes on each side. Carefully transfer them, so they don’t fall apart, to a dish with a lid and keep the olive oil in the pan. Add the garlic, onion, bay leaf and rosemary to the pan and sauté over medium to high heat for 1–2 minutes. Add the flour, stirring with the whisk to toast it lightly and then add the vinegar and sugar along with salt and pepper. Cook for about 6–7 minutes, until it thickens. Pour over the fried fish so that the sauce covers them. They are eaten cold. They keep for about 4 days in the refrigerator.
